Carrot Cake

2 C. Sugar
1 ¼ C. oil
3 eggs
2 tsp. Soda
2 ¼ C. flour
2 tsp. Cinnamon
½ tsp. Salt
2 tsp. Vanilla
1 C. chopped walnuts
2 C. ground carrots (carrots ground on a cheese grater)
1 C. flaked coconut (opt)
1 small can crushed pineapple, drained

Mix dry ingredients together. Then add the rest of the ingredients, except nuts and coconut. Add nuts and coconut. Bake in 9 X 13 pan at 350 for about 1 hour, until done.

Carrot Cake Frosting
1 (8 oz.) pkg. cream cheese
a few T. cream or milk
¼ C. Butter or margarine
add powdered sugar to taste and thickness
